Anthony D’Onise is a fourth-generation winemaker who has led the viticultural and winemaking operations at Windowrie since 2010. Anthony brings a wealth of experience from a lifetime immersed in winemaking, both locally and internationally.

Raised in an Italian-Australian winemaking family on his family’s vineyard in South Australia, Anthony’s passion for viticulture runs deep. After earning his Bachelor of Agricultural Science (Oenology) from the University of Adelaide in 2003, he honed his craft at some of the world’s most respected wineries, including Vylyan in Hungary, Le Chablisienne in France, and Australia’s Petaluma and Orlando. Before joining Windowrie, he served as the winemaker at the renowned Charles Sturt University Wines.

At Windowrie, Anthony embraces the winery’s commitment to organic, sustainable practices, ensuring that every step of the winemaking process honours the purity of the fruit. His approach is deeply rooted in a respect for nature, where the balance between soil health, vine quality, and environmental stewardship comes together to create wines of exceptional character.

At Windowrie Organic Wines, organic farming is about working in harmony with nature. Windowrie Organic Wines is proud to produce vegan-friendly wines, ensuring that no animal products or byproducts are used at any stage of winemaking. While the process of fining is typically used to clarify wine, it often relies on substances like gelatin, fish bladders, egg whites, or milk, which aren't suitable for vegans. At Windowrie, we avoid these traditional fining agents, maintaining the purity of our wines without compromising their clarity or quality.

Windowrie is proudly accredited by the nationally recognised Sustainable Winegrowing Australia program. Sustainability is woven into everything we do. Through our Environment Management System (EMS), we continuously monitor and improve our water use, waste management, and energy efficiency. Composting plays a vital role in our farming practices, with grape skins, stems, and straw from our own paddocks, alongside local olive paste and dairy waste, transformed into nutrient-rich compost. This organic matter enhances soil health, vital for organic farming, and helps us create a sustainable cycle that supports both the vines and the environment.

Over a decade ago, Windowrie Organic Wines embarked on an ambitious regeneration project to restore the natural landscape around our vineyards. Although dry years have presented challenges, we have made significant progress. To push this initiative forward, we recently established our own native tree nursery. This new venture enables us to grow and nurture native species on-site, reinforcing our long-term commitment to restoring and preserving the environment. Through regeneration, we are helping to ensure a healthier, more vibrant ecosystem for generations to come.
